Kath and the other staff at Stillwater restaurant are amazing, friendly, funny, and incredibly knowledgeable about the food and drinks menu, inside and out (which was very helpful for our tables allergies) and were able to give some amazing recommendations on drinks. The wine selection pairs beautifully with the food. Highly recommend the wallaby wings and the panna cotta. The staff also remembered that we were there for my mums birthday and even though it was another colleague we hadn’t spoken to about it, when he brought out our desserts, he had a candle and sang happy birthday for her (along with everyone else in the restaurant!)
An Unforgettable Dining Experience We had the privilege of dining at Stillwater after spontaneously walking in for a look. From the moment we were greeted, we knew we were in the best hands. While we unfortunately did not catch our waiter's name, they provided some of the finest service we have ever experienced. They thoughtfully introduced us to the orange wine and graciously offered a tasting of the white wines to help us make the perfect selection. We were incredibly fortunate to be looked after by this exceptional professional for the entirety of our lunch. The culinary offerings were outstanding. The Oka, suggested by our host, was an incredible balance of fresh coconut, citrus, and crispy sweet potato textures. The stuffed zucchini with muhammara was equally impressive, offering an edgy yet perfectly balanced profile. For the main course, the Cape Grim steak was exceptional, accompanied by inventive culinary sides like tempura mushrooms in a soy-based sauce rather than standard steakhouse staples, perfectly paired with a Tolpuddle Pinot Noir. To conclude, the vanilla panna cotta with lychee and pineapple textures was superb. To our absolute delight, our wonderful waiter then went above and beyond by guiding us on a personal tour of the wine cellar and arranging for us to purchase the stunning lemon-limecello we enjoyed with dessert. We are immensely grateful to the talented kitchen team, the lovely front-of-house staff, and especially our deeply engaging, passionate waiter for creating a truly unforgettable memory. We recently spent two nights at Stillwater Seven in Launceston and were absolutely amazed by both the accommodation and dining experience. The hotel is beautifully designed, combining comfort, functionality, and luxury in a way that makes you feel at home from the moment you arrive. The hospitality was exceptional, with friendly and attentive staff who made our stay truly memorable. The views from the property are simply stunning and add to the unique charm of the experience. The restaurant was equally impressive. We enjoyed the sashimi from bluefin tuna as an entrée and a local Tasmanian fish for our main course. Every dish was beautifully presented, incredibly fresh, and packed with flavour. Quite simply, everything was delicious and finger-licking good! Stillwater Seven offers the complete package - outstanding accommodation, warm hospitality, and exceptional food. We would highly recommend it to anyone visiting Launceston and look forward to returning in the future.
A review for the restaurant only. All of the food was absolutely doused in so much oil that we left feeling really sick afterward. It tasted bland and un-fresh. You are forced to have at minimum two courses (like an entree + main), which is frustrating if you want to just share a main and get lots of snacks and side dishes. We were going to cancel as we were so tired having just got into Launceston after being up travelling really early, but learned they charge a $90 cancellation fee PER PERSON. Ridiculous. Places that do stuff like this just come off as predatory. Overall, the food was average at best and the whole experience was massively overpriced for what it is. We spent $350 for two people who each had one drink each. The next night we ate at a lovely Japanese Sushi establishment for $80 and left completely satisfied without the stomach ache. We could eat there and leave satisfied FOUR times over and still have $30 to spare. Service was good, but will never come back here. Waste of time, money and energy.

With a well chosen wine selection and a strong sense of place, this restaurant delivers an experience that feels authentic, generous, and memorable. A destination well worth returning to.
